Handy plant that can provide us with a food source all year round... the Dandelion (Taraxacum officinale).
Sustaining yourself from wild foods is hard work, particulaly during the leaner times of year. It's therefore a good idea to try and familiarise yourself initially with plants that are easily identifiable, and will provide you with as big a window as possible to use it as a food resource.
The leaves of the dandelion are available almost at any point in the year and if you find young leaves, once washed they can be used as a salad leaf or included in sandwhiches to increase flavour. For the older leaves try frying them in a little butter. But please do beware, only consume them in small quantities as they are a diuretic.
The roots are also of use to us as they contain carbohydrates... although due to the size of the root it's only in a limited quantity. If you take the root and slice it up nice and thin it can be fried with a little fat from your rabbit... lovely!
